Who says packed lunches are always boring?

 

I’m not sure about you, but I like my packed lunch to meet the following three criteria:

  1. Not boring,

  2. convenient,

  3. tasty and nutritious!

Ok, techincally that’s four… but you get the idea.

Preparing lunch to bring to work each day can often though be a mundane and unappealing experience for many, as we find ourselves running out of ideas of what to bring, whilst also wanting to change things up every once in a while. So, to hopefully give you some inspiration, I’m going to share with you one of my regular go-to options.

 

Wraps

Quick to prepare the night before, morning of, or even assemble at work, wraps are a regular feature in my packed mid-week lunches.

Personally, I prefer to make my wraps at work and just bring the fillings with me to avoid it becoming soggy, but that’s just me. You do what works best for you!

For my base, I like to use lebanese bread. You can sub this out with other wraps if you’d prefer. For fillings, baby cucumbers and cherry/grape tomatoes are some of my favourites, as I love their refreshing taste and find that they’re still delicious without any dressing.

 
 
 

For protein I often use some leftover BBQ / roast chicken. You can also choose canned tuna, or four-bean mix for a vegetarian alternative. Whatever takes your fancy.

To make the wrap even more flavoursome, I like to use dips as a spread. A handy tip: the best dips to choose are those that don’t use cream cheese as the base. You’ll be able to tell this based on whether cream cheese is listed in the first three ingredients on the ingredients list.

This time I used Black Swan Skinny Sweet Potato, which has a yoghurt base. It has a sweet smoky flavour to it.

And that’s it! Wrap it up and you’re good to go.
